Add option to not include PII be default for Klaviyo & Shopify#1451

There is a lot of sensitive customer data that is automatically pulled into Windsor with no option to stop it from importing into Windsor. This include emails, names, addresses, phone numbers, etc. Other platforms (eg Funnel) give the option to excluded PII from being pulled in to keep sensitive customer data from being shared and stored outside the original source. Please consider adding this option for compliance and customer privacy reasons. Thanks!
